BEER & FOOD PAIRING - OUR NEW DISHES MEET HOME-BREWED BEER
18.03.25 / At Restaurant Lemke am Schloss, hearty pub cuisine and the finest brewing art merge to create a unique culinary experience. This is perfect food pairing, i.e. the most diverse flavours from different ingredients combine to form a harmonious whole. Our new menu brings Berlin classics to the plate with sophisticated beer creations. But which beer goes with which dish? We have put together some perfect “food & beer pairings” for you.
BIERGULASCH & LEMKE ORIGINAL (DARK LAGER)
Our braised beer goulash from pasture-raised beef is refined with our own “Lemke Original”. The roasted malt notes and subtle caramel sweetness of the dark lager enhance the deep, hearty flavours of the goulash. This is because the vigorous searing and long braising of the meat also produces great roasted notes that harmonise wonderfully with the dark lager. So if you order the beer goulash, the “Lemke Original” is the perfect accompaniment. A real pleasure experience!
THE RIGHT BEER WITH KNUCKLE OF PORK OR KNUCKLE OF PORK
Pork knuckle or knuckle of pork – prepared from the same piece of pork, but very different! We prepare the knuckle of pork entirely Berlin-style. It is first marinated in a beer marinade (also with our “Lemke Original”) and then cooked in a flavoursome broth. The meat is incredibly tender and very lean. The rind is not usually eaten, but it gives the meat a very nice flavour and ensures that it remains nice and juicy. The shank is also marinated in beer marinade, but is then placed in the oven and baked. The rind caramelises in the oven and gets a crispy, brown surface. Some of the fat roasts out and keeps the meat soft.
We serve both dishes with Bavarian cabbage and our own beer sauce, again flavoured with the “Lemke Original”. However, we would make a difference here as a beer accompaniment: “Berliner Perle” (Helles Lager) or “Bohemian Pilsner” (Bohemian Pilsner) go very well with the cooked Berlin-style knuckle of pork, which has a milder flavour overall. Oven-baked knuckle of pork, on the other hand, has more roasted and caramel flavours. Once again, our “Lemke Original” would be a good choice. An alternative, however, would be our hoppy “030 Berlin Pale Ale”. It’s about as bitter as a pilsner, but much fruitier – which perfectly balances the strong flavours of knuckle of pork and Bavarian cabbage.
BEER SAUSAGES & PALE ALE
Our “Original 99er” beer sausages are produced for us in Berlin according to a specially developed recipe: Thanks to spent grains from our production and the “Lemke Original” (once again!), they are particularly juicy, fluffy and aromatic. Of course, the “Lemke Original” in a glass goes well with them. But “030 Berlin Pale Ale” or “Bohemian Pilsner” also do a good job together with the 99ers and are a classic example of beer & food pairing!
Pork ribs “Kassler” with IPA mustard & Lemke India Pale Ale
The baked smoked pork ribs with a spicy mustard crust and our homemade IPA mustard harmonise perfectly with the intense hop character of the “Lemke India Pale Ale”. The subtle citrus and resinous notes of the beer emphasise the hearty flavours of the dish. And as the name of the mustard suggests, we refine it with our IPA (India Pale Ale) of all things, giving it a special twist. The “Lemke India Pale Ale” has more alcohol than we are used to from pilsner or pale ale and also brings “more flavour”. It is slightly more bitter and intensely flavoured. But that’s exactly what makes it a perfect match for the savoury baked smoked pork ribs!
Dolio Imperial Stout & Berliner Luft
For the crowning finale, we recommend our “Dolio Imperial Stout” in combination with our fluffy “Berliner Luft” – a light vanilla mousse with wild berries and after-eight chocolate. The dark, intense and chocolaty malt structure of the stout meets the sweet and fruity freshness of the dessert – a perfect combination!
